Macomb Culinary Alum Opens Bakery
About seven years ago, Vita Maria Lorenzano (formerly Loduca) was baking cakes out of her parents’ basement, juggling coursework, family life and a list of custom orders.
Today, she’s living the next chapter of her story, one with pink-and-cream walls, the scent of fresh cookies and a permanent storefront sign that reads Vita’s Cakery.
Vita’s Cakery opens in Shelby Township
Vita officially opened her own bakery on 25 Mile and Mound roads in Shelby Township on April 2. “I feel very accomplished,” she said. “Like I did something big and made a dream come true.”
Vita’s Cakery is a grab-and-go storefront designed to feel cozy, calm and inviting. The space features warm tones, including creams and soft pinks. It’s a palette chosen carefully to reflect the overall vibe of the store.
“It’s smaller, but warm and welcoming. A little girly, but neutral,” she said.
Grab-and-go bakery items, coffees added to menu
For years, Vita built her business around custom cakes. With the new storefront, her entire way of working has evolved. Although she still offers cakes, her menu has expanded to include jumbo cookies, brownies, cupcakes, ready-to-go cakes, seasonal desserts and coffees.
Specialty items, such as tiramisu and banana cream pie, rotate regularly. She’ll also offer special holiday and seasonal items.
And although adding coffee wasn’t originally part of her plan, she decided to challenge herself to expand her menu because coffee and sweets are inseparable, she said.
Now, coffee is one of Vita’s favorite parts of the shop. The menu includes lattes, Americanos, mochas and other espresso drinks. She also has a rotating flavor of the month.
Even with a full storefront, Vita hasn’t let go of her first love – custom cakes. She still offers beautifully decorated and delicious custom cakes for weddings, birthdays, graduations, holidays and other occasions.
“It’s definitely been a learning curve,” she said. “You have to constantly balance stocking product while serving customers. It’s a lot more work than I’ve done on my own before.”
For now, Vita is relying on family help to get the bakery off the ground. Her cousin, mom, mother-in-law, sister and husband pitch in regularly.
A new bakery built on a solid education and hands-on training
Even with the help from her family, Vita said she couldn’t have opened her bakery without the education and hands-on training she learned while earning her pastry arts degree at Macomb.
She said she sees her education reflected in every part of her business, from production planning to menu balance.
“Learning from the Macomb faculty with real-world experience has made all of the difference,” she said.
Vita’s Cakery is open Thursdays and Fridays from 8 am to 6 pm, Saturdays from 8 am to 4 pm, and Sundays from 8 am to 2 pm. Visit Vitascakery.com for more information.
